    About this recipe: This is a simple recipe I have made for a really lovely simple and quick mild korma, every one who has had it loves it so a good tip is make double because so far I've never had any left over for the next day as it all gets gobbled up every time.

    Ingredients
    Serves: 4 

    • oil to saute
    • 1 to 2 onions, diced
    • 3 heaped teaspoons of garam masala
    • 3 to 5 chicken breasts, cut into bite sized chunks
    • 100g (1/2 pack) creamed coconut
    • approx 300ml (1/2 pint) boiling water
    • 1 tablespoon of chicken gravy granules (or chicken stock cube)

    Method

    1. Heat oil in a pan and add the finely diced onions to soften but not brown.
    2. Add the garam masala to the mix and keep stirring so as not to burn the spices; this really releases the flavours.
    3. Add the bite size pieces of chicken to the pan to seal the chicken.
    4. Mix the 100g (half pack) of creamed coconut with around half a pint of boiling water. Throw in your chicken granules (or chicken stock cube) and pour the whole lot into the pan and mix together. Simmer untill chicken is cooked through.
    5. Adjust the liquid according to what consistancy you prefer but taste and add more liquid if needed. If you find it too thin just mix a little cornflour with a drop of water and add to the mix.

    Cook's notes

    This can also be made up on the hob then cooked in the oven or put into a slow cooker, but I do mine in a frying pan with a lid. All the measurements are approximate as I just throw it together, so adjust according to your own taste :) ... My mum and my boyfriend both love it.

    This didn't 'resemble' or 'taste' like a Korma!I know that Korma's are 'mild',but this had practically 'no' flavour @ all - 10 Mar 2010
