Sticky lemon cake

    This is the perfect recipe for a moist lemon cake...great with a cuppa!

    Serves: 6 

    • 110g (4 oz) caster sugar
    • 110g (4 oz) margarine
    • 140g (5 oz) self raising flour
    • 2 eggs
    • 2 or 3 tablespoons lemon curd
    • 1 teaspoon caster sugar
    • lemon juice

    Prep:10min  ›  Cook:40min  ›  Ready in:50min 

    1. Beat 110g caster sugar, margarine, flour, eggs and curd until smooth. Pour into a loaf tin.
    2. Bake for 30 minutes (around 180 degrees C) then turn down a little and cook for a further 5-10 minutes or until a skewer comes out clean.
    3. While the cake is still hot, melt a teaspoon of caster sugar and a little lemon juice in a saucepan or microwave, and pour over the cake.
    4. Sprinkle over some caster sugar (optional).

    Something else. I used this recipe to make cupcakes. The mixture made 8 cakes and I baked them on gas mark 5 for 25 mins.  -  03 Nov 2009


    Great cake, especially if caught on hop by visitor's its so quick. My stand by recipe.  -  08 May 2016


    absolutely delicious had to cover with foil and cook for a bit longer on a lower temp but that maybe because I added extra lemon curd, but yummy yummy yummy  -  13 Apr 2013
