Cook spinach, drain. Saute pancetta; add spinach. Turn off heat and add cheeses, pine nuts, eggs, nutmeg, salt and pepper.
Grease tin, roll pasty, add filling, cover with pastry.
Bake at 180 C / Gas 4 for 30 minutes or until golden.
Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.
