Nona's spinach pie

2 people made this

About this recipe: My Greek friend makes a similar pie with feta, spinach, eggs, onion, nutmeg and filo. Where the pie originates from - Italy or Greece - comes up everytime we share a piece of pie. I use puff or in fact any savoury pastry available at the supermarket.

Serves: 6

  • 1kg spinach
  • 200g ricotta
  • 50g raisins, soaked
  • 50g pine nuts
  • 100g pancetta (optional)
  • good handful parmesan to taste
  • 2 eggs
  • salt and pepper
  • pinch nutmeg
  • frozen puff pastry

Prep:10min  ›  Cook:30min  ›  Ready in:40min

  1. Cook spinach, drain. Saute pancetta; add spinach. Turn off heat and add cheeses, pine nuts, eggs, nutmeg, salt and pepper.
  2. Grease tin, roll pasty, add filling, cover with pastry.
  3. Bake at 180 C / Gas 4 for 30 minutes or until golden.

Parmesan cheese

Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.
