2 teaspoons fresh thyme or 1 tablespoon dried thyme
300ml soured cream or fromage frais
2 tablespoons curry powder
400g pasta bows (preferred but any pasta will do)
salt and pepper
Cheddar cheese (any amount you like)

preheat oven 200 C / 180 C fan / gas mark 6.
Trim meat and thinly slice to approx 2cm square.
Lightly fry pork in olive oil with thyme salt and pepper to seal in juices. Drain oil and place pork in casserole dish.
Mix curry powder with brandy, sherry or rice wine, then add ketchup and cream. Cover meat with sauce and then cover with cheese.
Cook in middle of oven for 22 minutes, then cover the dish and cook for a further 8 minutes.
Meanwhile, cook pasta as directed on packet. Drain and serve with pasta and the sauce from the casserole spooned over. Serve with crusty bread and red Italian wine - ENJOY.
