Easy marinated mushrooms

    I serve these mushrooms at parties, as an elegant and delicious antipasto. All you need is good bread or toast to serve with it.

    Serves: 8 

    • 500g fresh mushrooms, such as chestnut or crimini, stemmed
    • 4 tablespoons extra virgin olive oil
    • 3 tablespoons white wine vinegar
    • 2 cloves garlic, pounded
    • 4 tablespoons red onion, finely chopped
    • 2 tablespoons (packed) chopped fresh oregano
    • 2 tablespoons (packed) chopped fresh thyme
    • 1/2 teaspoon salt
    • 1/2 teaspoon freshly ground black pepper

    1. Boil the stemmed mushrooms in plenty of salted water for 10 minutes. Drain and let cool.
    2. Combine all ingredients in a glass jar, carafe or container and mix well. Add the mushrooms and refrigerate until serving at least 5 hours.
    3. Remove from refrigerator 10 minutes before serving.
