Quick & Easy Chicken Curry

    Okay, maybe a little cheating with the curry sauce, but as a student I can't afford all the fresh ingredients!

    Serves: 4 

    • Patak's Concentrated Curry Sauce (can) - Hot Madras
    • 4 chicken breast fillets
    • 1/2 onion
    • 2 to 3 peppers
    • 1 bag baby spinach
    • 1 courgette
    • 4 to 5 mushrooms
    • To serve
    • flavoured Rice
    • naan bread
    • poppadoms

    1. Chop half an onion finely and fry over a medium heat till golden brown.
    2. Whilst the onion is browning, cut up chicken breasts into 2cm cubes. Add to browned onions and raise the heat
    3. Cut up the peppers and any other vegetables and add to mix when the meat is browned.
    4. Stir the mixture for two minutes, then add curry sauce.
    5. Half fill the empty curry can with water and shake it, then add it to the mix. Bring to the boil.
    6. De-stalk a bag of baby spinach, rinse well and add to mix. Simmer for 10 minutes or until spinach is wilted.
    7. Serve on bed of rice (two rice packets serves 3 or 4 if naans and/or poppadoms added).
