    About this recipe: This is a lovely dip recipe for a fresh tomato salsa, great with corn chips, carrots, celery, or crackers!

    Serves: 10 

    • 3 large tomatoes, finely chopped (vine ripened is the best)
    • 1/2 a red onion, very finely chopped
    • 2 tablespoons of coriander
    • juice of 1 small lime
    • 1 tablespoon of lemon juice
    • 2 teaspoons dried chilli flakes
    • 2 teaspoons chilli sauce
    • 1 teaspoon of parsley (dry or fresh)
    • 1/2 teaspoon garlic
    • salt and pepper to taste

    1. Mix all of the ingredients together.
    2. Using a pestle (or fork) mush the mixture to bruise the tomatoes.
    3. It can be eaten straight away, but is best if left in the fridge overnight to 'marinate'.
