    About this recipe: When you're feeling as stuffed as the turkey and can't face a sandwich or spending much time in the kitchen, try this light meal using the turkey leftovers.

    Ingredients
    Serves: 2 

    • 2 tbs Thai fish sauce
    • Juice of half a lime
    • Juice of half an orange or lemon
    • 2.5cm fresh ginger, peeled and grated
    • 4 dried red chillies, crushed
    • a few drops of sesame oil
    • FryLight or a tiny spray of sunflower oil
    • 450g turkey leftovers
    • salt & black pepper
    • A bag of salad leaves (Peppery ones work well but it's your choice)

    Method

    1. Whisk the fish sauce, lime juice, lemon/orange juice, ginger, chillies and sesame oil in a bowl. Season to taste with salt and black pepper.
    2. Slice or shred the turkey meat and toss with the salad leaves.
    3. Pour over the dressing, toss again and eat!
