1 or 2 free range eggs (depending on quantity of beans used)
salt and freshly ground pepper to taste

Boil or steam beans until al dente, drain.
Meanwhile, add onion and garlic to frying pan together with oil and saute until soft and opaque.
Add beans to onion mix and saute together gently for a few minutes. Make a small hole in to middle of pan and add the eggs. Mix round to create a scrambled texture and incoporate the ingredients of pan. Cook until egg binds with the mix, but do not over cook.
