Devonshire Honey Cake

    Serves: 12 

    • 225g unsalted butter
    • 250g clear honey, with a little extra to glaze
    • 100g dark muscovado sugar
    • 3 large eggs
    • 300g self-raising flour

    1. Preheat the oven to 160 C. Butter and line a 20cm cake tin.
    2. Slowly melt the butter in a medium pan with the honey and sugar. When liquid, allow to boil for about 1 minute. Leave to cool, the mixture needs to be cool enough not to cook eggs.
    3. Beat the eggs into the cooled honey mixture with a wooden spoon. Sift the flour into a large bowl and poor in the egg and honey mixture, beating until you have a smooth batter.
    4. Pour the mixture into the tine and bake for 50 minutes - 1 hour until the cake is well-risen, golden brown and springs back when pressed.
    5. Turn the cake out onto a wire rack. Warm the extra honey in a small pan and brush over the top of the cake to glaze, then leave to cool.
