Lois' 7 minute gooey chocolate fudge cake
This is a recipe I have known since I was a child and is a great one to rustle up if you are in need of a quick chocolate fix as it comes out as a chocolate sponge cake with a delicious choc sauce hidden at the bottom. Great with icecream!
Ingredients
Serves: 6
- 110g (4 oz) self raising flour
- 110g (4 oz) caster sugar
- Pinch of salt
- 30g (1 oz) cocoa
- 55g (2 oz) melted marg
- 1 egg
- 4 tbsp milk
- 1 tbsp vanilla extract
- For the sauce
- 110g (4 oz) brown sugar
- 30g (1 oz) cocoa
- 150ml (1/4 pint) water

- Mix together flour, caster sugar, salt and 30g (1 oz) cocoa.
- Add melted marg, egg, milk and vanilla extract to above mix. Stir well to combine and place in microwavable bowl (sides should be about 5cm (2 in) high as cake will rise).
- Make sauce by combining 110g (4 oz) brown sugar with the remaining cocoa. Sprinkle on top of batter mix.
- Warm water for 30 secs and tip on top of cake gently. Use a fork to gently prick a few holes in batter to allow some water to seep into it.
- Cook on high in microwave (800 watt) for 5 minutes.
- Serve with ice cream or custard.

This recipe is fantastic, I'll definitely be making it again! The only mistake I made was using demerara sugar instead of soft brown sugar but it'll be even more delicious next time I make it with the correct sugar - 18 Sep 2011

Realy good!! Its perfect if you're looking for a quick chocolate fix. Best eaten when just made i found,went abit dry by the end of the day but even then if you warm it up again its good as a quick snack - 06 Jun 2010
