Christmas morning gluten-free muffins

    Yummy for breakfast especially around Christmas time - use cranberries or any other dried fruit you like.

    Ingredients
    Serves: 12 

    • 250g mashed bananas
    • 3 tablespoons vegetable oil
    • 2 eggs, lightly beaten
    • 125ml milk
    • 300g sifted gluten-free self-raising white flour
    • 100g dried berries
    • 1 teaspoon cinnamon
    • 2 tablespoons soft brown sugar
    • 60g walnuts, chopped

    Method

    1. Preheat the oven to 200 C / Gas 6. Line a 12 hole muffin tin.
    2. Mix the mashed bananas, vegetable oil, eggs and milk in a bowl.
    3. In another bowl mix the flour, berries, cinnamon, sugar and walnuts.
    4. Add the wet ingredients into the dry ingredients all at once. Mix until combined.
    5. Using an ice cream scoop, scoop the batter into the prepared tin. Bake in the oven for 20 minutes or until golden. Cool in the tin.
