Christmas Turkey Curry

    A really great all in one curry dish that uses your christmas left overs.

    Serves: 4 

    • Cooked Turkey meat, Thighs, legs, breast whatever you have left over.
    • 1/2 pint of turkey stock
    • 2 tablespoons of curry powder (madras)
    • 1 Onion
    • 200g of mushrooms
    • 6 rashers of bacon optional
    • 5 medium potatoes
    • 2 tabelspoons of oil
    • 2 desert spoons of tomato ketchup

    Prep:10min  ›  Cook:40min  ›  Ready in:50min 

    1. Par boil the potatoes
    2. in a large pan add the onion and the oil cook until onions are clear and soft.
    3. add the curry powder and stir into a paste,
    4. add your turkey (and bacon if you wish) to the pan in bite sized shredded pieces.
    5. cook through for 5 minutes until turkey has taken the colour from the curry powder.
    6. Add the potatoes
    7. Pour over the turkey stock.
    8. Add tomato ketchup
    9. simmer for 20 mins stirring regularly.
