Christmas Bubble and Squeak Cakes

    A recipe for bubble and squeak cakes, which make a great leftover Christmas dish perfect for a lunch/brunch. Serve on Boxing Day morning with bacon and a fried egg.

    Serves: 4 

    • leftover mash potato (you need plenty of mash compared to other ingredients)
    • leftover turkey
    • leftover Brussels
    • leftover cabbage
    • leftover stuffing
    • knob of butter or oil for frying
    • flour for dusting

    1. In a mixing bowl add the mash potato. Add a small amount of turkey. Add some crushed Brussels sprouts, shredded cabbage and a small amount of stuffing.
    2. Mix it all together with hands. Press into patty / cake shapes.
    3. Heat the oil/butter in a large non stick pan (preferably with thick base for even heat distribution).
    4. Dust each cake with flour add to the pan cook on a medium heat until golden and heated through thoroughly.
