Sweetcorn and Pea Tortilla

    Great for kids. Can use leftover boiled potatoes.

    Serves: 4 

    • 3 eggs
    • handful of frozen peas
    • handful tinned sweetcorn kernels
    • pre-cooked potatoes
    • black pepper to taste
    • olive oil, for frying

    1. In a bowl mix all the ingredients together except the potatoes and oil. Add the eggs and beat them. Add the peas and sweetcorn and mix up.
    2. Slice your potatoes, these will be the base of the tortilla. In a frying pan, add a little oil and when hot, add the sliced potatoes and fry until they start to turn golden.
    3. When the potatoes are golden, pour over the mixture and leave to cook on a low/med heat for about 5/10 mins. You want the tortilla to start cooking on the surface.
    4. When it has started bubbling on the surface, stick it under the grill so the top is cooked and browned.
    5. Voila, one tasty sweetcorn and pea tortilla. You can add anything to this - bacon, cheese etc. Cut into quarters and serve with salad or couscous.
