Cherry Berry Christmas Cake

    My grandmother lived in Hong Kong for many years. She always makes this cake for Christmas. It is a lot lighter than the traditional Christmas fruitcake. I like the flowery and the fruity flavour. It is our family's traditional Christmas cake

    Serves: 6 

    • 250ml strong Jasmine flower tea
    • 50g dried cranberries
    • 50g Goji berries
    • 50g glace cherries
    • 50g raisins
    • 25g candied peel
    • 175g butter
    • 175g caster sugar
    • 3 eggs
    • 250g self-raising flour
    • zest of 1 lemon
    • 1 teaspoon mixed spice
    • 1 teaspoon rose water

    1. Soak the fruits in the Jasmine flower tea.
    2. Cream butter and sugar together.
    3. Add beaten eggs. Then add in the berries and Jasmine tea liqueur.
    4. Fold in the flour, spice, lemon zest and rose water.
    5. Line a loaf tin with greaseproof paper. Grease well. Spoon the cake mixture into a prepared tin.
    6. Bake in the centre of the oven Gas mark 4 or 180 C for 50 minutes.
    7. Cool on a wire rack. Decorate the cake with icing sugar.
