Ingredients
Serves : 12
- 1 kg (2 lb) ripe bananas
- 75ml (3 fl oz) fresh lemon juice
- 2 tablespoons dark brown soft sugar
- 1/4 teaspoon ground nutmeg
Directions
Prep:5min › Cook:10min › Ready in:15min
- Combine all ingredients in a blender and purée until smooth. Heat to a boil in a saucepan and simmer slowly, till mixture is thickened. Serve warm over pancakes, or cool and serve as a jam.
Tip:
Add this cooled compote to ice cream and milk, and blend all together for a banana milk shake!

I have just made up this recipe and have eaten it with pancakes. Heaven! What a fabulous way to use bananas! There's some left over to have with ice cream - plain vanilla would be best, I think, but plain chocolate would be great, too. Absolutely adore this recipe! One further tip: Add a bit of cinnamon to your pancakes if you're going to have this with them, it makes for a very subtle but wonderful addition! - 30 Oct 2012
