Snowflakes Coconut Rice Christmas Cake

    I was on holiday staying with a friend in Malaysia one Christmas. My friend 's mother make this very special cake for our Christmas tea. Every year I make this cake to remind me of the happy time I had with my friend in Malaysia.

    Serves: 6 

    • 1 tin (400 ml) coconut cream
    • 25g/1oz pudding rice
    • 50g/2oz caster sugar
    • 25g/1oz flake almonds
    • 150g/6oz butter
    • 150g/6oz caster sugar
    • 3 eggs
    • 200g/8oz self-raising flour
    • 50g/2oz desiccated coconut
    • 5 tablespoon coconut cream

    1. 1. Heat the rice, sugar and coconut cream in a pan. Simmer till the rice is soft and all the coconut cream is absorbed. Leave to cool.
    2. 2. Cream butter and sugar together in a food mixer till white and fluffy. Add in beaten egg.
    3. 3. Add in desiccated coconut. Fold in the self-raising flour.
    4. 4. Stir the coconut cream into the cake mixture.
    5. 5. Transfer the cake mixture into a prepared 18cm round cake tin and bake in the centre of the oven Gas Mark 4 /350F/ 180C for 45 minutes.
    6. 6. Remove the cake from the oven. Spread coconut cream rice on to the top of the cake and the sprinkle on the almond. Bake for another 15 minutes.
    7. 7. Leave on a wire rack to cool.

    Serving suggestion

    Serve as afternoon tea on Christmas day or Boxing day
