Pineapple and rum champagne punch

    This champagne cocktail recipe is perfect for Christmas or New Year's. Place in a punch bowl with pineapple pieces, and ladle into champagne flutes (with or without the pineapple, I prefer without).

    Serves: 6 

    • 150ml white rum
    • 1 small tin pineapple pieces
    • 50g caster sugar
    • 1 bottle champagne

    Prep:5min  ›  Extra time:8hr chilling  ›  Ready in:8hr5min 

    1. The day before serving, place the rum, pineapple and its juice, and sugar in a bowl. Cover and let marinate overnight in refrigerator.
    2. Just before serving, combine the rum mixture with well chilled champagne (or sparkling wine). Serve in a punch bowl, and ladle into champagne flutes.
