    About this recipe: A deliciously refreshing pause in between courses, or for a light way to end a meal.

    Serves: 4 

    • 1/2 bottle rose champagne
    • 2 tablespoons caster sugar
    • 2 tablespoons water

    1. In a small saucepan, combine the sugar and water. Bring to the boil and boil till the sugar is dissolved.
    2. Allow the sugar syrup to cool, then add the champagne. Pour into a shallow container and freeze for 2 hours, stirring regularly. Serve in small dessert cups.
