If you like sweet and savoury, this compote goes very well leg of lamb, lamb chops or pork.

Ingredients
Serves: 12
- 1kg quince, peeled and thinly sliced
- 600g granulated sugar
- 500ml water
Method

Ready in:35min
- Combine the quince, sugar and water and bring to the boil in a large pot (the quince should be just covered with water). Continue at a rolling boil until the quince is transparent. Allow to cool before serving. Store in the fridge or freezer.

Altered ingredient amounts. I used 450 grams sugar and still found it too sweet for my taste - 18 Apr 2010
