Bacon wrapped Chicken a la Jim

    A really great way to make chicken breasts taste fab! Really succulent bacon wrapped chicken with a fabulous cheese sauce in the middle.

    Serves: 4 

    • 4 Chicken Breasts (plump ones are best)
    • 1/2 Teaspoon Garlic Salt
    • 2 Teaspoons Rosemary
    • 4 rashers Smoked back bacon
    • 100 grams Strong cheddar cheese

    1. Pop the oven on to preheat - gas mark 5
    2. Slice the chicken breasts longways and make a pocket inside,
    3. Rub a little garlic salt inside the pocket, and sprinkle generously with rosemary
    4. Dice the cheese into small cubes (the smaller the better as it makes the next step easier!)
    5. Stuff the pocket full of cheese, then pull the pocket closed
    6. Wrap the chicken breast in a rasher of bacon, ensuring you cover the pocket entrance, and place on a baking tray
    7. Pop in the oven and cook for 45 minutes
