700g good quality Christmas fruit cake
8 tablespoons icing sugar
250g milk or dark chocolate
100g white chocolate

Crumble fruitcake into a bowl. Melt milk/dark chocolate and add to fruitcake with the brandy and icing sugar. Stir mixture until combined and then roll into little balls. Refrigerate until cold.
Melt the white chocolate and drizzle over the top of the balls. Top the truffle off with a glace cherry.
