About this recipe: This cake is easy to make and when sliced thinly, looks like a stained glass window. I make lots of little cakes in mini loaf tins and give them away for Christmas.


Makes: 1 cake

  • 140g brazil nuts
  • 60g blanched almonds
  • 60g cashew nuts
  • 250g glace cherries
  • 160g glace fruit
  • 160g dried fruit
  • 100g plain flour
  • 8 tablespoons dark brown soft sugar
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 teaspoon vanilla extract

  1. Preheat oven to 130 degrees C. Mix the nuts, fruit and dry ingredients in a large bowl. Reserve some fruit for decoration. Cup the large pieces of fruit and nuts.
  2. Mix eggs and vanilla until thoroughly combined and add to the other ingredients. Mix thoroughly.
  3. Press evenly into a 20cm ring tin or 2 small loaf tins, lined with greased baking parchment. Press extra nuts and cherries into the top for decoration.
  4. Bake for 2 hours or until firm in the centre. Cool, and brush all over with rum or brandy. Store at room temperature. Cut into thin slices.
