Spicy Vegetable and Paneer Tart

    Lovely spicy tart made with paneer cheese.

    Ingredients
    Serves: 4 

    • 110g paneer
    • 2 teaspoons harissa paste
    • 1 red onion, chopped
    • 1 red pepper, chopped
    • 1 green chilli, sliced finely
    • 1 courgette, chopped
    • 3 tomatoes, chopped
    • 1 teaspoon whole cumin seeds
    • 1 teaspoon chopped fresh coriander
    • 1 clove garlic
    • glug of olive oil
    • 3 eggs
    • 100ml double cream
    • 1 teaspoon garam masala
    • a few basil leaves
    • 1 pinch chilli powder
    • salt and pepper to taste
    • 1 (20cm) shortcrust pastry case

    Method
    Prep:1hr  ›  Cook:1hr  ›  Extra time:12hr marinating  ›  Ready in:14hr 

    1. Marinate paneer in harissa overnight
    2. Toss vegetables, cumin and coriander in olive oil and roast in oven until soft and golden
    3. Whisk eggs into cream and add garam masala, chilli and season to taste.
    4. Preheat oven to 190 C / Gas 5.
    5. Layer the cheese and vegetables in the pastry case, pour over egg mixture and bake for 30-40 minutes or until set and brown.
