Toasted pecan and treacle glazed salmon

    I developed this recipe after having loads of treacle left over from Christmas cooking. A new twist on salmon, treacle and crushed pecans provides a rich bittersweet glaze adding a depth of flavour to regular salmon.

    Serves: 4 

    • 3 tablespoons treacle
    • 1 1/2 teaspoons cornflour
    • 2 tablespoons soy sauce
    • 1 tablespoon minced or grated ginger
    • 1 tablespoon water
    • 1 spring onion, finely sliced
    • 4 salmon fillets
    • 1 tablespoon crushed pecans, lightly toasted

    1. Stir together treacle and cornflour. Add soy sauce, ginger, water and spring onion.
    2. Place salmon fillets skin down in a lined baking dish. Pour treacle mixture over each piece of salmon, leaving a small amount aside for later basting.
    3. Bake for 20 minutes in a preheated 200 C / Gas 6 oven, or until the fish flakes easily. Baste halfway through cooking with leftover glaze.
    4. Sprinkle crushed pecans over fillets before serving.
