    This is a Jamaican-style boiled pudding made using fresh coconut, milk, flour, raisins and brown sugar.

    Serves: 4 

    • 2oz margarine
    • 1 pint milk
    • 12oz fresh coconut flesh
    • 1lb plain flour
    • 4oz raisins
    • 4oz demerara sugar
    • 4 tbsp water

    1. Melt the margarine.
    2. Blend together the milk and coconut, then mix in the flour.
    3. Mix everything together.
    4. Make some foil into 5" by 6" packets. Seal all sides except one short one on each packet. Fill the packets with the mixture and seal shut.
    5. Boil for one hour, remove from foil, serve hot.


    I don't know if coconut milk works in place of the milk. If someone could try it I'd be very grateful.
