About this recipe: A great way to use up any leftovers.

Serves: 4 

  • 4 cups Any leftover ingredients
  • 1 Egg
  • 1 tbsp Olive oil
  • 2 tbsp plain flour
  • 4 Bread rolls
  • 2 Cloves Garlic
  • 1 tbsp Fresh parsley
  • 4 tbsp Mayo

Prep:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Put any leftovers you may have in a food processor & roughly blend
  2. Mix in 1 beaten egg
  3. Cover hands in flour and form into patties
  4. Heat olive oil & fry the patties in moderately hot oil for approx 8 minutes each side
  5. Serve in warm rolls with Garlic mayonaise
  6. To make the garlic mayonaise: Crush the garlic & mix with the chopped parsley & Mayo - this is best refrigerated for at least an hour before use


In the photo I used Christmas dinner leftovers, predominantly sausagemeat stuffing. My brother is a big fan 'leftover burgers' and uses virtually any leftovers: takeaways, roast dinners. Add a dash of tabasco or some chillies to pep it up a bit! Its not gourmet: but always tasty!
