These easy quesadillas are a great way to get your five a day and are especially filling with the added egg. This makes two main courses, or cut in wedges it can be easily served as a starter for 6 to 8 people.
Combine spinach, spring onions and grated cheese in a large bowl. Add the beaten eggs, along with salt and pepper to taste.
Heat a frying pan or wok with a bit of the olive oil over medium high heat. Swirl to coat evenly. Place one tortilla in the pan and spoon 1/2 of the spinach mixture into the middle. Immediately place another tortilla on top and press down. Lower the heat and cook for a few minutes, until bottom tortilla is golden.
Drizzle a bit of the olive oil over the top of the quesadilla and flip. Cook for another few minutes until bottom is golden. Repeat with remaining ingredients and serve warm, cut into wedges.
