Easy Peasy Potato, Onion & Bacon Bake

About this recipe: Most of us have some potatoes, onions and bacon in our larder and this is an easy and quick recipe. Can be used as a side or main. I threw this together the other day when I was bored of the usual potatoes and its tasted pretty yummy!

Ingredients

Serves: 2 

  • 6 medium / large potatoes
  • 4 rashers of bacon
  • 2 large onions
  • 1/2 tea spoon mustard
  • Little bit of vegetable stock water
  • Sprinkle of cheese

Method

Prep:5min  ›  Cook:25min  ›  Ready in:30min 

  1. Grill or fry the bacon (until as crisp as you like). Whilst it is cooking, roughly chop the onions and slice the potatoes thinly lengthways. In a bowl, add a little bit of hot water onto a vegetable stock cube and add the potato, onion, sliced bacon and mustard. Mix together well. Then I put this mix into a bread baking tray, sprinkled the cheese on top (I used chedder, you could use brie or anything else you liked!) and add salt & pepper. Cover with foil. I cooked it for 25 mins at 200 degrees.

Tip

The good thing about this recipe is that you don't have to measure things exactly and its versatile - you can use any type of cheese / stock cube etc. you like. I have made it again since and added a handful of fresh herbs (parsely and dill) which tastes lovely. You could leave out the bacon if your a veggie.

I've been using a version of this recipe for years since I found it in 'Paupers Cookbook' simply layer all the ingredients and pour cheese sauce over and bake in a low oven. Perfect for a winter's evening. - 08 Oct 2012

Something else. i used chedder cheese sauce on top so my toddler would enjoy the creamy texture! added sage to recipe, tasted lovely! - 20 Sep 2010
