Grill or fry the bacon (until as crisp as you like). Whilst it is cooking, roughly chop the onions and slice the potatoes thinly lengthways.
In a bowl, add a little bit of hot water onto a vegetable stock cube and add the potato, onion, sliced bacon and mustard. Mix together well. Then I put this mix into a bread baking tray, sprinkled the cheese on top (I used Cheddar, you could use Brie or anything else you like!). Season with salt and pepper. Cover with foil.
Bake it for 25 minutes at 200 C / Gas 6.
The good thing about this recipe is that you don't have to measure things exactly and its versatile - you can use any type of cheese, stock cube, etc. I have made it again since and added a handful of fresh herbs (parsley and dill) which tastes lovely. You could leave out the bacon if you're a veggie.
I've been using a version of this recipe for years since I found it in 'Paupers Cookbook' simply layer all the ingredients and pour cheese sauce over and bake in a low oven. Perfect for a winter's evening. - 08 Oct 2012
