Mario's Italian baked chicken

    Truly scrumtious, totally divine, mouthwatering easy recipe to change up your chicken dinner routine! Serve with warm ciabatta bread to mop up all the delicious juices, and plain veggies, carrots, green beans and babycorn are good with it too.

    Serves: 4 

    • 4 large chicken breasts
    • 100g sliced pepperoni
    • 125g mozzerella cheese
    • 10 to 12 cherry tomatoes, quartered
    • 150ml olive oil
    • 1 large bunch of basil
    • freshly ground black pepper, to taste

    Prep:15min  ›  Cook:1hr  ›  Ready in:1hr15min 

    1. Take a large sheet of foil and put in a medium roasting tin. Preheat oven to 190 degrees C / Gas 5.
    2. Take chicken breasts, slice a pocket into each one, stuff with 4 to 5 pieces of sliced pepperoni and a piece of sliced mozzerella, place in foil (no need to add salt, pepperoni is salty enough).
    3. Scatter over cherry tomatoes, rest of the pepperoni and basil leaves, add freshly ground black pepper, pour over the olive oil. Seal foil parcel and place in oven for 45 mins.
    4. After 45 mins, undo foil parcel and place back in oven for 10 to 15 mins.
    5. Rest fo 5 mins and serve with all the delicious juices.

    Used different ingredients. I really don't like basil,so i used 1 teaspoon of 'dried' oregano instead!I couldn't get 'fresh' oregano (unfortunately),so had 2 use dried,but it still tasted good!  -  27 Jan 2010


    , I found this very easy to make, I love tomato and basil and the taste of it with the chicken pepperoni and mozzerella was truly lovely. My whole family enjoyed this dish, which makes a change, so I will definately be making this again. Also if you make a deep enough pocket and push the cheese right in, it doesn't escape, I also wrapped the foil tightly around the chicken so maybe that helped to.  -  07 Jan 2011


    this is really good meal......had it a long time ago in restaurant and this recipe reminded me of how to cook it the taste of the chicken, cheese and pepperoni all together is brillant idea and taste even better with lovely tomato sauce Had trouble with keeping the cheese in the chicken so will have to think of good way to do that...maybe wrap string around the chicken  -  16 Jun 2010
