About this recipe:I got this recipe from my girlfriend and its loads healthier and tastier than buying premade pancake mix, that stuff is for chumps.
Makes: 7 small pancakes
250ml full fat milk
120g spelt flour
1 to 2 tablespoons caster sugar (to taste)
1 tablespoon cinnamon
1 1/2 teaspoons baking powder
1 tablespoon melted butter

Mix the milk, spelt flour, egg, baking powder, cinnamon and caster sugar in a large bowl in no particular order stirring until it is thoroughly mixed and there are no clumps.
Then I like to put my frying pan on the hob (lucky you if you have a griddle pan) and turn the heat to medium low letting the 1 tablespoon of butter melt slowly in the pan creating a nonstick coating, swirl the pan a few times then pour the remaining butter into the batter and give it another few good stirs.
Pour the batter very slowly into the middle of the pan once its heated, letting it become a circle as large as you want the pancake to be.
When small little bubbles start to form on the top of the whole pancake (not just the sides or middle) its time to bust out your spatula and flip it over.
After that, just check the bottom of the pancake with the spatula every few minutes until it is a desired golden brown colour, then take it out, let it cool, and enjoy, or make a few more pancakes because this recipe should make about 7 small ones = )
