Lentil and tomato pasta sauce

    A delicious, wholesome and filling sauce for pasta, flavoured with marmite and garam masala. Cheap, easy and definitely comfort food!

    Serves: 2 

    • 1 onion, chopped
    • 1 clove garlic, peeled and chopped
    • 1 tablespoon olive oil
    • 100g red lentils
    • 550ml vegetable stock
    • 150ml passata / sieved tomato
    • 1 tablespoon soy sauce
    • 1 tablespoon Henderson's® Relish (optional)
    • 1/2 teaspoon marmite
    • 1 tablespoon garam masala
    • salt and pepper to taste
    • 120g any pasta
    • 1 tablespoon pine nuts (optional)

    1. In a saucepan, fry the onion and garlic in the olive oil until soft.
    2. Add the lentils to saucepan with the vegetable stock, passata, soy sauce, Henderson's relish and marmite, and bring to the boil. Add the garam masala and seasoning to taste.
    3. Boil rapidly for 10 minutes, uncovered.
    4. Reduce the heat, cover and simmer for a further 20 - 25 minutes, stirring from time to time. Add the pine nuts, if using, 10 minutes before the end. Add more boiling water if necessary.
    5. Meanwhile, cook your pasta. When the pasta and sauce are ready, mix them together until the pasta is coated. Serve.

    Freezing tip

    This freezes well.
