Spicy Chicken and Roasted Mediterranean Vegetable Couscous

About this recipe: An fairly easy to cook dish with a kick. Quite a healthy dish with plenty of vegetables and fairly cheap too. Just scale down the portions for fewer people. I tend to make it as described and chill the remainder for lunches.

  • 2 skinless boneless chicken breasts
  • 1 red pepper
  • 1 green pepper
  • 1 courgette
  • 1 red onion
  • 1 1/2 tablespoons olive oil
  • 3 rashers unsmoked back bacon
  • 1 tablespoon hot chilli powder
  • salt and black pepper to taste
  • 1 teaspoon dried mixed herbs
  • 1 clove garlic
  • 300g couscous

  1. Preheat the oven to 180 C / Gas 4. Pour the olive oil into an oven dish and place in the oven to warm. Chop all the vegetables and garlic and place in the oven dish with the herbs, salt and pepper and mix well. Place back in the oven for around 10-15 minutes mixing now and then.
  2. Meanwhile chop the chicken breasts into bite size chunks and dice the bacon slices. Cook the chicken and bacon in a preheated frying pan with very little oil. Place all chilli powder over the meat while frying. Fry until cooked through.
  3. Five minutes before everything is cooked, place the couscous in a really large pan. Cover with boiling water around 2cm (1 inch) above the couscous, cover the pan and leave.
  4. After 5 minutes, place the cooked vegetables and cooked meat into the pan with the couscous along with any juices. Mix thoroughly, for around 4-5 minutes ensuring the couscous is thoroughly coated with any chilli oil residue.
  5. Serve in bowls with perhaps and side salad and garlic bread.


Goes great with a medium dry white wine.

even my daughter liked this and that's rare, I did add some paprika and cooked the couscous in stock instead of plain water. - 13 Aug 2013
