Basic pancakes

    My mum taught me this easy-to-memorise recipe for pancakes. We always tripled it for our family of seven.

    Makes: 9 (10cm) pancakes

    • 125g plain flour
    • 1 tablespoon caster sugar
    • 1 teaspoon baking powder
    • 1/2 teaspoon bicarbonate of soda
    • 1/4 teaspoon salt
    • 250ml milk
    • 1 egg
    • 2 tablespoons vegetable oil

    1. Preheat a lightly oiled frying pan or griddle over medium-high heat.
    2. Combine flour, sugar, baking powder, bicarb of soda and salt. Make a well in the centre. In a separate bowl, beat together egg, milk and oil. Pour milk mixture into flour mixture. Beat until smooth.
    3. Pour or scoop the pancake batter onto the hot pan, using approximately 60ml (4 tablespoons) for each pancake. Brown on both sides and serve hot.

    I have never in over 40 years of pancakeday's added baking soda to a pancake mix. My results were always light and fluffy. The secret is in the mixing and standing time.  -  16 Feb 2010
