Place about 10 or so mint leaves in a tall cocktail glass. Add sugar and warm water, and muddle gently. Add crushed ice. (If you don’t have crushed ice, put some in a towel and whack it with a rolling pin. Or, add ice to a cocktail shaker and shake it vigorously to crack it.) Pour in Cognac, and stir. Top with sparkling wine. Garnish with fresh mint leaves.
