Banana coconut loaf cake

    Two magnificent flavours, banana and coconut, come together for an irresistibly moist loaf cake. Studded with walnuts and glace cherries, this cake has it all!

    Serves: 12 

    • 2 eggs
    • 200g sugar
    • 110g butter, melted
    • 225g mashed bananas
    • 1/2 teaspoon almond extract
    • 200g plain flour
    • 8 tablespoons desiccated coconut
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon bicarb of soda
    • 1/2 teaspoon salt
    • 60g chopped walnuts
    • 125g glace cherries, chopped

    1. Mix together flour, coconut, baking powder, bicarbonate of soda, salt, chopped walnuts and cherries.
    2. Break eggs in a mixing bowl, and beat until light and frothy. Add sugar and melted butter. Beat well. Stir in mashed banana and flavouring. Add flour mixture, and stir just to combine. Spoon into greased 23x12cm (9x5 in) loaf tin.
    3. Bake at 180 C / Gas 4 for 1 hour, or until a skewer inserted in centre comes out clean. Let stand for 10 minutes, and remove from tin. Cool.

    Delicious & moist full of flavour and suprisingly easy to make. I didn't have the walnuts or cherries but it didn't matter. I put it in a round tin and made up some light buttercream, the family love it and I have added it to my favourites yum yum oh and it only took 45mins  -  04 Dec 2010


    Perfectly moist and lasts for a good few days..I made these into mini loafs for a picnic!  -  23 Aug 2015


    I find most of the recipes on these sites use far too much sugar, so I halved the amount and used golden caster instead, and substituted coconut oil for the butter....used pecans, personal choice only took 50 minutes, on 180 .....looks and smells delicious, too hot to cut at the moment!  -  03 Feb 2018
