Hearty Winter Chicken & Rice Broth

    This is a great soup for curling up in front of the fire on cold winter nights, it's also great for kids and those who don't like veggies as everything is grated and as there's no butter or cream it's really healthy

    Serves: 8 

    • 2 uncooked chicken breasts
    • 1 litre chicken stock
    • 1 onion
    • 2 large carrots
    • 1 large leek
    • 100g basmati rice
    • salt & pepper to taste

    Prep:20min  ›  Cook:30min  ›  Ready in:50min 

    1. Place uncooked whole chicken breasts in a large soup pot, cover with 1litre of boiling stock and bring to a simmer
    2. Quarter the onion and add to the stock
    3. Add the rice to the simmering stock
    4. Grate the carrots and leek on the small side of the grater (the leek does become a bit gloopy!)
    5. Add the grated carrot & leek to the pot and continue to simmer for 30 mins until the chicken and rice are cooked
    6. Remove the 2 chicken breasts from the pot, shred into small pieces and return to the soup
    7. Serve with warm crusty bread
