Easy potato scones
These pretty scones are very moist and flavourful, tasty slathered with butter, honey or jam... Great for using up leftover mashed potato.
Ingredients

- 250g plain flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 50g cold butter or margarine
- 200g mashed potatoes (prepared with milk and butter)
- 80ml milk
- 1 egg

- In a bowl, combine the flour, baking powder and salt. Rub in butter until mixture resembles coarse breadcrumbs.
- Combine potatoes, milk and egg; stir into the crumb mixture until a soft dough forms. Turn onto a floured surface; knead gently 10-12 minutes or until no longer sticky.
- Gently pat or roll dough into a 23cm circle about 2cm thick. Cut into 10-12 wedges. Separate wedges and place on an ungreased baking tray. Bake at 200 C / Gas 6 for 15-18 minutes or until golden brown.

Lovely! and really easy to make, very soft and moist and delicious with jam or with something savoury - will definitely make again. I didn't need any milk but might do next time depending on the variety of potato. - 18 Apr 2015
