About this recipe: We love quiche in our house; however, my mother is allergic to onions, so we created a recipe that she can enjoy with us.

Serves: 8

  • 1 large ready-made pastry case
  • 800g sliced bacon
  • 3 eggs, lightly beaten
  • 1 (397g) can evaporated milk
  • 1/2 teaspoon spicy brown mustard
  • 1/4 teaspoon ground nutmeg
  • 60g plain flour, or as needed
  • 350g grated mild Cheddar cheese

Prep:15min  ›  Cook:1hr15min  ›  Extra time:10min cooling  ›  Ready in:1hr40min

  1. Preheat oven to 180 C / Gas 4. Prick bottom and sides of pastry case and bake 10 minutes, until lightly brown; set aside to cool.
  2. Place bacon in a frying pan over medium-high heat and cook until evenly brown. Drain, dice and set aside.
  3. In a bowl, mix eggs, milk, mustard and nutmeg. In a separate bowl, toss bacon with flour to lightly coat. Spread 3/4 bacon mixture and cheese over bottom of pastry case. Pour egg mixture over bacon mixture. Top with remaining bacon mixture.
  4. Bake 1 hour in the preheated oven, or until a fork inserted in the centre comes out clean. Cool 10 minutes before serving.

We just loved it! Easy to make, and since my hubby hate onions it was perfect! - 11 Aug 2010
