Chicken fajita sandwiches

    This is a delicious take on a chicken fajita - spicy chicken with salsa, served with crusty bread instead of tortillas.

    Ingredients
    Serves: 8 

    • 3 tablespoons vegetable oil
    • 6 (170g) skinless, boneless chicken breast fillets, thinly sliced
    • 1 small onion, sliced
    • 1/2 red pepper, sliced
    • 125ml tomato juice
    • 2 tablespoons taco seasoning spice mix
    • 250ml tomato salsa
    • 8 (1cm thick) slices crusty bread
    • 225g grated Cheddar cheese

    Method

    1. Heat the oil in a large frying pan over medium-high heat. Add the chicken, and cook and stir until lightly browned, about 5 minutes.
    2. Stir in the sliced onions and red peppers, and cook and stir for 5 minutes or until the vegetables are tender. Stir in the tomato juice and taco seasoning, and mix well. Cook mixture until the juice has thickened and the chicken is well coated with sauce, about an additional 7 minutes.
    3. Preheat the grill and set the rack about 10 to 15cm from the heat source.
    4. Spread 2 tablespoons of salsa over each slice of bread. Evenly spoon the chicken mixture on top of the salsa topped bread. Sprinkle each sandwich with 4 tablespoons of the Cheddar cheese.
    5. Place sandwiches under the preheated grill and cook for 5 minutes or until the cheese is melted and beginning to brown.

    very good! I added sliced avocado and sliced tomatoes underneath the chicken mixture and added extra cheese. I also used rye bread which turned out yummy!     What a great idea Laughingmagpie! We love fajitas, and this was a delicous way to make them! I did toast my bread first(as I do for Bruschetta). Will make these again and again. The only thing I will do different, is to use fresh spices (garlic, cilantro, lime juice, etc.)next time to season the meat, instead of the taco packet:just a preference.     thanks laughingmagpie! these were great i only made a few changes. i used ortega fajita seasoning instead of taco seasoning and i didnt slice my bread just halved it to make them into french bread pizza fajita melts. will def. make these again.  -  20 Jan 2009  (Review from Allrecipes US | Canada)
