About this recipe: This recipe transforms kale, a dark leafy green, into a delicious and spicy snack. The resulting kale is crispy and amazingly light, the texture is similar to that of popcorn.

    Ingredients
    Serves: 4

    • 270g kale, stems removed, washed, thoroughly dried, torn into 3cm pieces
    • 1 tablespoon extra-virgin olive oil
    • 1 tablespoon chilli powder or to taste
    • 1/2 teaspoon coarse sea salt

    Method
    Prep:15min  ›  Cook:10min  ›  Ready in:25min

    1. Preheat an oven to 200 C / Gas 6.
    2. Place the kale into a large mixing bowl and drizzle with the olive oil. Toss until evenly coated, then gently massage the kale for 1 minute. Sprinkle with the chilli powder and salt. Toss again. Spread the seasoned kale onto a baking tray in a single layer.
    3. Roast in the preheated oven for 5-8 minutes, then stir the kale and continue roasting until the edges become brown and a little crispy, 5 to 8 minutes. Some of the kale will cook quicker than the others, simply remove these whilst allowing the others to continue to cook. Serve immediately.

These were very good. Was looking for a new recipe for Kale and found this. They are definitely spicy and the Kale cooks down quite a bit. Seems critically important to toss and coat the kale leaves evenly with the oil and spices. Note that ours were a bit salty as I overdid the salt. Probably something you want to experiment with in terms of exact seasoning amounts.  -  04 Feb 2009  (Review from Allrecipes US | Canada)

I was very excited to try this recipe with some leftover kale. I made the mistake of over salting...I didn't have kosher salt and just used sea salt and should have decreased the amount. Like another reviewer, I used about 1 tsp of chili powder and the flavour was great. Next time I will be more watchful during the last few minutes of cooking time since I came close to burning the whole batch--I'm looking forward to correcting my mistakes and trying this again!  -  09 Jun 2009  (Review from Allrecipes US | Canada)

Wow! This was so so good! I had no idea what to do with the kale in my green grocer box last week. I didn't want to make a soup or stew, which seem to be the most common recipes using kale. I was careful to very lightly but evenly coat the pieces in olive oil. It was so good, I'd buy kale at the store just to make it again!  -  01 Jun 2009  (Review from Allrecipes US | Canada)
