270g kale, stems removed, washed, thoroughly dried, torn into 3cm pieces
1 tablespoon extra-virgin olive oil
1 tablespoon chilli powder or to taste
1/2 teaspoon coarse sea salt

Preheat an oven to 200 C / Gas 6.
Place the kale into a large mixing bowl and drizzle with the olive oil. Toss until evenly coated, then gently massage the kale for 1 minute. Sprinkle with the chilli powder and salt. Toss again. Spread the seasoned kale onto a baking tray in a single layer.
Roast in the preheated oven for 5-8 minutes, then stir the kale and continue roasting until the edges become brown and a little crispy, 5 to 8 minutes. Some of the kale will cook quicker than the others, simply remove these whilst allowing the others to continue to cook. Serve immediately.
