No-Bake Chocolate and Chestnut Cake

    This recipe was handed down to me from my Italian mother. It's known as 'Torta di Castagne'. It is a no-bake cake, you simply throw all the ingredients together, form a log and allow it to chill overnight before slicing and serving. It is great for any special occasion, on its own or served with whipped cream.

    Serves: 6 

    • 100g caster sugar
    • 45g unsweetened cocoa
    • 115g unsalted butter, melted
    • 1 (435g) tin chestnut puree
    • 50g whole almonds, chopped
    • 60g walnuts, chopped

    Prep:10min  ›  Extra time:8hr chilling  ›  Ready in:8hr10min 

    1. Stir together the sugar, cocoa, butter and chestnut puree in a bowl. Fold in the almonds and walnuts until evenly blended. Pat the mixture into a log and wrap tightly with parchment/greaseproof paper. Refrigerate overnight before slicing to serve.

    Found in Waitrose or Sainsburys as "Merchant Gourmet Chestnut Puree, Creme De Marrons".

    Dear Maria, Since chestnuts are not available in India,I tried this recipe with hazel nuts and cashew nuts.I powdered the nuts and mixed with butter and remaining ingredients.I used sugar substitute.The recipe came out very well and tasty.
