    About this recipe: This sweetened coconut sauce is a simple, yet delectable treat. It's made simply from two ingredients - coconut milk and dark brown soft sugar. You can use this sauce as a topping for Thai sticky rice, ice cream or fresh fruit.

    Makes: 300 ml

    • 1 (400ml) tin full-fat coconut milk
    • 220g dark brown soft sugar

    1. Bring the coconut milk and sugar to the boil in a heavy-bottomed pot. Reduce heat to medium low; cook and stir whilst boiling until the mixture is thick and the volume has reduced by about half, about 20 minutes.
