Sweet Coconut Sauce

    This sweetened coconut sauce is a simple, yet delectable treat. It's made simply from two ingredients - coconut milk and dark brown soft sugar. You can use this sauce as a topping for Thai sticky rice, ice cream or fresh fruit.

    Makes: 300 ml

    • 1 (400ml) tin full-fat coconut milk
    • 220g dark brown soft sugar

    Prep:5min  ›  Cook:30min  ›  Ready in:35min 

    1. Bring the coconut milk and sugar to the boil in a heavy-bottomed pot. Reduce heat to medium low; cook and stir whilst boiling until the mixture is thick and the volume has reduced by about half, about 20 minutes.

    This is a good start but it is way too sweet. I will use half the sugar next time and may even go to a white sugar. I think half the brown sugar would be fine but it also turns the sauce brown which is a little strange for coconut sauce. If that does not taste good I will go back to the brown.
