About this recipe: The lemon zest in this recipe gives these soft cake-like cookies a deliciously fresh citrus flavour. They are delicious on their own or served with a cup of tea or coffee.

Makes: 18 cookies

  • 100g unsalted butter, softened
  • 100g caster sugar
  • 1 egg
  • 225g plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 5 tablespoons honey
  • 4 tablespoons natural yoghurt
  • 2 teaspoons grated lemon zest
  • 1/2 teaspoon lemon extract
  • Icing
  • 125g icing sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons grated lemon zest

  1. In a small mixing bowl, cream butter and sugar. Beat in egg. Combine flour, baking powder and salt. Combine honey, yoghurt, lemon zest and lemon extract. Add dry ingredients to creamed mixture alternately with honey mixture.
  2. Drop by tablespoonfuls 5cm apart onto greased baking trays. Bake at 180 C / Gas 4 for 10-12 minutes or until golden brown. Remove to wire racks. In a small bowl, combine the icing sugar and lemon juice until smooth. Brush over the warm cookies; sprinkle with lemon zest.

Why do recipes insist on UNsalted butter and then add salt to a recipe: it just leaves possible cooks thinking 'Oh well, I've none in, so I'll just make something else'? - 18 Mar 2013


mine were quite cakey, maybe put too big a dollop on the baking sheet. They took a bit longer to cook but tasted yummy. Thanks. Will try again with smaller 'dollops'. - 04 Mar 2013
