Fresh tomatoes, onion, tomato purée and olive oil make this basic pasta sauce. It great for any use - as a base for Spaghetti Bolognese, as a pizza topping, or with fried breaded chicken or aubergine slices.
In a large frying pan over medium heat, cook onion in olive oil until translucent. Stir in tomatoes, cook until juice begins to thicken. Stir in tomato purée, salt and pepper. Reduce heat and simmer 15 minutes more, until rich and thick.

Find yourself with an abundance of tomatoes? Make several batches of this basic sauce and then freeze in meal-size portions!
I found out while I was cooking this that It wasn't quite working out, it was to lumpy, and the amount it told you to leave it, it end up getting burnt . So I added water to make the texture more cleansy, I'm afraid that didn't help either. I wouldn't waste half an hour on cooking this and ending up with half a handful.

I added chicken and chilli sauce to make it abit more exciting. I also put in 3 more tomatoes to make extra sauce (It didn't have enough originally). I really liked the result.

This is a great sauce. I found it to be missing a bit of richness, so I added 225ml of chicken stock and let it reduce down, I also added some fresh basil right before serving. I served the sauce over spaghetti with homemade meatballs. The result was fantastic!

This was a super fast and easy recipe! My family really liked it but I did alter it a bit. I followed some suggestions of other reviewers and reduced the olive oil. I also added some spring onions. When the sauce was simmering, I added some dried garlic, dried basil and grated pecorino romano cheese. It was GREAT!
i find it very hard to get my kid's to eat jars of sauce. But they all really enjoyed this quick and easy sauce and the best thing about it is you can also add whatever herbs and spices you like just to add to the flavour. Great all round sauce thanks Lima
This was just what I was looking for. Very good sauce, and easy to adapt to a variety of uses. I thought it was just a bit too oily - would reduce oil by at least 1 tablespoon next time.
