About this recipe:This is a delicious pizza recipe that uses fresh pizza dough. Smoky barbecue sauce is used instead of the traditional tomato sauce, which is then topped with shredded chicken, crispy bacon, red onions, chillies, Gorgonzola and Mozzarella. If you're not a blue cheese fan, omit the Gorgonzola.
4 tablespoons olive oil
1 red onion, sliced
6 rashers streaky bacon
1 portion fresh pizza dough
175ml barbecue sauce
2 cooked chicken breast fillets, shredded
4 tablespoons crumbled Gorgonzola cheese
1-2 green chillies, seeded and diced or to taste
1 tablespoon paprika
1 tablespoon garlic granules
225g Mozzarella cheese, grated

Heat the oil in a frying pan over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low and continue cooking and stirring until the onion is very tender and dark brown, 15 to 20 minutes more.
Place the bacon in a large, deep frying pan, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a kitchen towel-lined plate; crumble when cool.
Preheat an oven to 220 C / Gas 7. Grease a pizza/baking tray.
Press the fresh pizza dough onto the pizza/baking tray. Spread the barbecue sauce evenly over the dough and sprinkle with the shredded chicken, caramelised onion, bacon, Gorgonzola and diced chillies. Season with paprika and garlic granules. Top with the grated Mozzarella.
Bake in the preheated oven until the cheese has melted and is bubbly and the pizza dough is golden brown on the bottom, 15 to 17 minutes.
