Smoky Mustard Chicken and Bacon Melt

About this recipe: Chicken breasts are topped with smoky barbecue sauce, mustard, crispy bacon and cheese, before being baked to perfection. Serve with salad, potatoes, rice or pasta.


Serves: 4 

  • 4 skinless chicken breast fillets
  • 1 tablespoon vegetable oil
  • 4 tablespoons barbecue sauce
  • 2 tablespoons mustard
  • 4 rashers streaky bacon, cooked until nearly crisp
  • 225g Cheddar cheese, grated

  1. Preheat oven to 180 C / Gas 4.
  2. Melt butter in a large frying pan over medium high heat. Add chicken breasts and saute until just cooked; don't brown. Place chicken on a lined baking tray.
  3. Spread a little barbecue sauce, then a little mustard, evenly on top of each breast. Arrange a bacon slice on each breast, then cover all with cheese.
  4. Bake in preheated oven for 30 minutes or until chicken is cooked through and juices run clear.
