    About this recipe: This is a wonderfully refreshing and soothing drink, to be enjoyed any time of the year. I find it delicious served over crushed ice, with an additional lemon slice.

    Serves: 8 

    • 475ml boiling water
    • 70g lavender flowers
    • 475ml cold water
    • 250ml lemon juice
    • 200g caster sugar

    1. Place the lavender in a serving jug/pitcher; pour the boiling water over the lavender; cover with plastic wrap and allow to steep 10 minutes; pass through a sieve and discard the lavender from the water. Return the water to the serving jug/pitcher. Add the cold water, lemon juice and sugar to the serving jug/pitcher and stir until the sugar dissolves. Refrigerate until serving.

    Lavender flowers

    If unavailable, substitute in dried lavender buds to taste.
