Lavender-infused lemonade

    This is a wonderfully refreshing and soothing drink, to be enjoyed any time of the year. I find it delicious served over crushed ice, with an additional lemon slice.

    Serves: 8 

    • 475ml boiling water
    • 70g lavender flowers
    • 475ml cold water
    • 250ml lemon juice
    • 200g caster sugar

    Prep:10min  ›  Cook:5min  ›  Extra time:1hr chilling  ›  Ready in:1hr15min 

    1. Place the lavender in a serving jug/pitcher; pour the boiling water over the lavender; cover with plastic wrap and allow to steep 10 minutes; pass through a sieve and discard the lavender from the water. Return the water to the serving jug/pitcher. Add the cold water, lemon juice and sugar to the serving jug/pitcher and stir until the sugar dissolves. Refrigerate until serving.

    If unavailable, substitute in dried lavender buds to taste.

    Very pronounced lavender flavor with a pretty pink color!! My kitchen smelled like aromatherapy during and afterwards! I used dried organic culinary lavender (which I ordered over the internet).     This is way too much sugar. I had to fill the rest of the 2 qt pitcher up to dilute it and it's still way too sugary. Great concept, though. I used lavender leaves instead of flowers and 1/4 cup reconstituted lemon juice since I had no fresh on hand. Next time, I think I'll cut the sugar in half, add a little more lemon juice, and enough water to fill a 2 qt pitcher.  -  29 Jul 2011  (Review from Allrecipes US | Canada)
