About this recipe:This pilau rice is full of flavour and vegetables. It's a delicious one-pot meal, which can be served on its own. I like to serve it with a simple onion and tomato raita.
4 tablespoons cooking oil
6 whole cloves
2 bay leaves
2 cinnamon sticks
2 black cardamom pods
1 teaspoon cumin seeds
1 onion, thinly sliced
1/2 tablespoon ginger puree
1/2 tablespoon garlic puree
3 carrots, peeled and cut into long strips
2 potatoes, peeled and cubed
150g fresh fine green beans, cut into long strips
150g frozen peas
750g basmati rice, rinsed
salt to taste
1.5 litres water

Heat the oil in a large frying pan; fry the cloves, bay leaves, cinnamon sticks, cardamom pods and cumin seeds in the hot oil until fragrant, 2 to 3 minutes. Stir the onion, ginger puree and garlic puree into the spice mixture and continue cooking until the onions are golden brown, 5 to 7 minutes. Add the carrots, potatoes, fine green beans, peas and rice; cook and stir for 2 minutes. Pour the water over the mixture and season with salt; gently mix to incorporate.
Bring the mixture to the boil; cover and reduce heat to low. Cook on low until the rice is tender, about 20 minutes. Remove the lid and cook another 15 minutes. Stir gently before serving.
This was ok, but with the quantities given in the recipe it came out rather bland. It took over an hour to cook the potatoes and carrots, if I was making this again I would parboil them before adding them to the rice mixture. I would also use less rice or more spices! - 03 Jul 2012
